Jollof rice. The name itself practically rolls off your tongue like a flavour explosion waiting to happen. But this isn’t your average rice dish, oh no. This is West African royalty, a one-pot wonder with a history richer than the tomatoes that stain your fingers the best kind of red.

Ever heard of friendly competition? Well, buckle up, because Jollof rice is the Beyonce to every other West African country’s stewed rice dish. Nigerians, Ghanaians, Senegalese – they all claim to have the one true Jollof recipe. We’re talking bragging rights, national pride, and the whole works. Spoiler alert: they’re all delicious, so this fight is all in good fun… mostly.

From Empire to Every Plate:

Jollof’s roots go back centuries, tracing back to the mighty Jolof Empire in Senegal. Back then, it was a dish for royalty, a fancy feast made with fish and spices brought in from all corners of the kingdom. Fast forward a few hundred years, and Jollof became a glorious one-pot meal enjoyed by everyone, from bustling markets to family gatherings.
